The cooking process is a form of heat treatment that can aid in adding value to your products.
When a product is completely cooked in oil, there will be a high absorption of oil and a loss in moisture.
However, due to an increasing demand for healthier alternative products, more and more processing companies decide upon a combination of deep-frying and oven cooking.
Products can also be cooked without using a fryer, like marinated hot wings, chicken drumsticks and roast beef.
Industrial cookers are designed to continuously cook or steam a variety of product ingredients such as pizza crumbles, meatballs, rice, pasta, fruit, vegetables and a variety of processed meats (beef, pork, poultry or fish).
The industrial cookers can be designed to utilize direct or indirect steam, oil and water immersion or thermal screw configurations.
